With the popularity of the King’s Vegetable curry, there’s a growing demand for vegan versions.
This is especially true in India where the curry is a popular staple dish.

Heat 1 tbsp oil in a large frying pan.
Add onion and cook until softened, about 5 minutes.
Add tomatoes and cook for another 2-3 minutes.
Add ginger, garlic, ginger, tomato paste, cumin, salt and pepper.
Add curry paste and cook a further 3-5 minutes.
Add coconut milk and cook on medium-low heat for 10 minutes.
Add coriander, red chilli powder, paprika and turmeric and mix well.
Add salt and mix again.
To cook the veggie curry, heat a wok or wok-towel over medium-high heat and add 2-4 tbsp coconut milk.
Stir-fry the veg mixture until golden brown and fragrant.
Remove from the heat and serve with rice, noodles, basmati rice, pappadoms or even vegetable curry.
