Freezing Vegetables recipe: This is the simplest recipe you can make to make your own vegetables at home.
It takes about 30 minutes to make and is delicious.
The steps are: Bring water to a boil in a saucepan.
Add onion, garlic, ginger and saute.
Add tomatoes, potatoes and water.
Add water to the saucepan and cook for about 15 minutes.
Remove from heat and let cool.
Stir in the chillies and cook till the potatoes are tender.
Add a little more water if needed.
Let cool for 10 minutes.
Add spinach, mint, coriander leaves, water and cook on medium heat for 15 minutes on a low heat.
Remove and allow to cool.
Put the vegetables back in the sauce pan and cover with lid.
Bring the water to boil again and add onions, garlic and ginger.
Bring to a simmer.
Remove the lid and let cook for a minute on low heat on medium.
Add tomato sauce and salt.
Add coriandine leaves and stir again.
Cook on low for a couple of minutes.
Serve with chopped corianders and garnish with mint leaves.
