We started with a recipe for a quick, easy soup that would make a perfect side dish or meal to serve with your favorite appetizer or dessert.
But the basil, parsly, carrots and garlic ingredients add such a rich flavor to this soup that it could easily become a meal on its very own.
We had a few ideas of what to make with the fresh basil and carrots, but once we got the idea that we wanted to use the parsley, we realized that the vegetables are actually just as delicious as the fresh ones, and we didn’t want to waste any time with that recipe.
We decided to add a touch of garlic powder and fresh lemon juice to make a savory and slightly sweet-tasting soup, with a creamy consistency that can be used as a dressing for soups, or as a dipping sauce for fish or chicken.
A few months later, we have been enjoying this soup more than ever.
