By Emily Lacy, NBC News – The final day of the 2015 VegFest, a nationwide vegan gathering, took place at the Marriott Marquis in Los Angeles.
But as the day ended, there was one last treat for the fans: a veggie bowl of soup and a bowl of egg rolls.
The bowl of eggs was a surprise, given that the Veggie Bowls had a “Vegetarian and Vegan” section.
But this was all about the veggie soup.
The bowl of vegetables featured mushrooms, spinach, kale, carrot and sweet potato, and they were topped with fresh cilantro, chili powder and soy sauce.
“I’m a fan of vegetables,” said one fan, who asked to be named only by her first name, Emily.
“This bowl is so good.”
In fact, Emily’s boyfriend, Kyle, said he was so inspired by the bowl of veggies, he planned to try one.
“It’s so simple,” Kyle said.
“It’s like a bowl full of spinach and mushrooms.”
The bowl’s veggie-filled flavor is just as satisfying to eat as the actual veggies, which are often served with a side of rice or pasta.
Kyle said the bowl is also a nice change of pace from the regular Veggie Meal, which he said was all the more delicious because it had a big pot of vegetables.
The final day was a lot of fun for Emily, who was inspired to try a new way of eating, according to Kyle.
The bowls are a nice way to make vegan meals without a lot, he said.
But Kyle also thinks it’s a nice gesture to bring some veggies to a big vegan gathering.
“If you have a good meal, bring a little,” he said, laughing.
Emily said she will definitely be making a bowl again.
“Maybe this year,” she said.
“This is a good way to have a nice vegetarian meal with some good vegetables.”
